Butler Passed Appetizer's
Our Version our Seafood Thermador

Seafood Thermadore
Bechamel
!/4 LBS of Butter
1 Cup of Flour
2 cups of whole milk
½ cup of heavy cream
1 Bayleaf
salt and pepper to taste
Melt butter in a medium sauce pan, add flour to make roux add Bay leaf. Slowly stir in milk until it becomes creamy add cream and set aside
Seafood Mixture
3 lbs of Seafood
1 small onion or shallot
3 garlic gloves
4 slices of white bread
In a medium skillet sauté shallots or onion and a small amount on garlic gloves in butter when clear add lobster meat, scallops , shrimp and crab meat add to this cubes of white American bread with the crust trimmed off …combine well and set aside
Combine both together in a bowl evenly distribute into casserole dishes and bake for 20 minutes at 300 degrees when they reach desired thickness let cool….when a order comes in place in oven for 10 minutes or until it reaches temperature now add mozzarella cheese and serve

Busy Weekend for Renaissance Catering

Two great weddings this past weekend! Renaissance Catering catered a beautiful wedding reception on Saturday at the Comfort Inn Cocoa Beach. The appetizer table with the presentation mirrors was fantastic! The buffet included my favorite Asian Pork loin with ginger glaze and great Apple Raisin Stuffing. The second wedding took place a Front Street Civic Center. Renaissance's own party designer Rose Marie out did herself and impressed everyone with her styling and elegance
